Carmel Corn!!

So I’ve been having sugar cravings.  Not that it’s that abnormal for me. 🙂  But I just wanted something different.  Now, some months back, my husband bought popcorn kernals off of Amazon.  A lot.  So we’ve been eating popcorn a lot, which is great.  And I had a thought – carmel corn.  Delicious!  So I went to allrecipes.com and found a great recipe called My Amish Friend’s Caramel Corn, but with a few alterations based on some extensive research. 🙂 I’ve never attempted to make anything like it, so I was very happy with the outcome.  So first I used my air popper and popped two 1/2 c batches of popcorn.  DSCN0222I put it into a large roaster pan.  Then in a sauce pan I mixed butter, brown sugar, light Karo syrup and salt. Brought to a boil, stirring constantly, on medium-high heat.  Once at a full boil, I turned the heat down and simmered for 5 minutes.  After I removed it from heat and I added the baking soda.  It foams up.

I thought it was kind of neat. 🙂  It’s the scientist in me I guess.  So anyway, now we are ready for pour it over the popcorn!DSCN0225It was a little difficult to stir it at first, but it got easier.  Now pop it into the oven (hehe – I made a pun!) at 250 degrees for 45 minutes.  Stir it every 15 minutes.

Now pour it into wax paper to cool.  Break up the chunks as you go.  I got interrupted at this point by one of my lovely children.  When I went to dump it out on the wax paper, it was in the shape of my roaster pan.  I had a lot of breaking up of chunks to do.  But it still tasted delicious!!

Carmel Corn Recipe:

two 1/2 cup batches of popcorn
1 c butter
2 cups brown sugar
1/2 c. light Karo syrup
1/2 tsp. salt
1/2 tsp. baking soda

Preheat oven to 250 degrees. Spray pan (roasting pan or 10×15 pan) with non-stick cooking spray. Pop (2) 1/2 cup batches of popcorn directly into prepared pan. In sauce pan, add butter, brown sugar, Karo syrup and salt. Melt over medium-high heat, stirring constantly. Bring to a boil. Once you’ve reached a full boil, turn down the heat to simmer for 5 minutes.
Remove from heat, add 1/2 tsp. baking soda and stir.
Pour over popcorn. Stir carefully and quickly to coat evenly. Bake it in the preheated oven for 45 minutes, stirring every 15 minutes.
Dump on wax paper and allow to cool.

And of course, my funny kid quip for the post: I told my 4 year-old to go play with her dolls and she responded saying, “Mommy, I want to do my schoolwork, not play with my dolls! Silly mommy.”  If only she would keep that enthusiasm for schoolwork for the rest of her life.
